2011 Chevillon Cailles Nuits St. Georges

"Monsieur Chevillon commented that the 2011 les Cailles was already beginning to close down for the winter and that the wine was quite a bit more expressive a few weeks before my visit. Given how beautifully this great wine in the making was showing, I would have loved to have seen it when it was really on form! The stunning and very sappy nose offers up scents of plums, black cherries, raw cocoa, a touch of meatiness, coffee bean, nutskins, a dollop of vanillin oak and a simply stunning signature of soil. On the palate the wine is very pure, full-bodied and youthfully structured, with a sappy core of fruit, ripe and suave tannins, lovely focus on the soil- driven finish. The 2011 is a great young Cailles that may not quite match the brilliance of the 2010 version, but is an absolute reference point example of this superb terroir. 2025-2070." [+]
