Our Syrah is a blend of both early and late pick fruit. The early pick provides bright red fruit flavors, high acidity and lower alcohol, while the late pick fruit provides a fuller mouth, darker gamey flavors and slightly higher alcohol. Bleeding off some of the juice (saignee method) is done to concentrate the Syrah’s flavors and provide a rich dark color. The saignee juice is then made into a rose. We use just 30% new French oak from Nadalie and Seguin Moreau cooperages and age it for about 10 months before bottling. [+]
