Patrick Javillier Bourgogne Blanc Cuvee Oligocene 2013

In 1974, when Patrick Javillier became a wine broker, he joined a generations-long family legacy. However, his dream was to establish his own Domaine, so armed with an oenology degree from the University of Dijon, he began making wines from a seven-acre parcel that hed inherited from his father. In the years that followed, Patrick produced wines of repute and founded Domaine Patrick Javillier in 1990. The Domaine has grown to 24 acres and spans 14 appellations. There are some red vineyards (via his wifes family), but the core of the Domaines holdings are planted to white grapes. Patricks approach to winemaking is simple and straightforward with each vintage, he questions everything. He is both deeply thoughtful and a perfectionist the result is a portfolio of wines that are startling for their purity and character, especially when you realize that he owns only one tiny 1er Cru parcel and an even smaller plot of Grand Cru! Patrick is convinced that a long elevage on the lees is essential for proper development of the wine and vinifies parcel by parcel and also cask by cask before making the final assemblages.
